Our latest 'Supplier Focus' blog looks at Christian Skelton, Director at Good Fat who told us more about his business in a recent interview.

Tell us a bit about your company and its background.
Founded way back in 2017 following a chance discovery of American avocado mayonnaise, we spent nearly nine months developing our own mayo range, trying out hundreds of ingredients and recipes, before settling on our final four unashamedly fatty flavours in July 2018.
 
The name Good Fat owes itself to my dear mother who used to use the phrase long before it, or avocados, were the flavour of the month! She would justify eating avocados with the phrase ‘it’s ok, it’s fat, but it’s good fat’. As a 12-year-old kid, I had no idea what on earth she was going on about but it must have had a profound effect…
 
Based in Selsey, West Sussex – famed hometown of the late Sir Patrick Moore no less – there are currently three of us running the show operating out of ‘The Fat Lab’ – basically a shed where we do all of our R&D. Whilst we have ambitious plans for Good Fat, at this stage in the business, we rely on a great local manufacturing partner to take care of production.
 
Who does it sell to?
We sell to small artisan food retailers; farm shops, food halls and delis predominantly, along with a small-scale e-commerce operation via Amazon.

Is there a specific product you are particularly proud of and why?
Late 2018/19 we tweaked our recipes to use a top-secret blend of avocado and hi-oleic sunflower oil instead of just avocado oil due to a number of factors – discovering that avocado oil tends to want to split under 8°C for one! – but the end result was a reduction in saturated fat and polyunsaturated fat within all four of our mayos by 6% and 17% respectively!
 
We’re all about fat, but we try to make sure all of our products are packed with the right type of fat – monounsaturated, the stuff that helps protect our hearts by maintaining levels of good HDL cholesterol while reducing levels of bad LDL cholesterol[1].
 
When we discovered hi-oleic sunflower oil, we knew it would fit the bill. Pronounced ‘high oh-lay-ick’, hi-oleic sunflower oil is a type of sunflower oil naturally bred using traditional, selective plant breeding techniques to be rich in good fat. It perfectly compliments avocado oil, is pretty much the healthiest oil around, and as far as we know, we are the first company to use it in the UK for mayonnaise – something we’re pretty proud of!
 
What do you most enjoy about running your business?
The challenge. Getting out of bed every morning to disrupt the establishment one jar at a time is incredibly daunting, but also massively challenging.

What are your ambitions for your company?
To help inspire the food industry revolution; to breathe life, personality and humanity back into food, whilst banishing the out-of-date stigma that fat has endured over the past 30 years.
 
If someone had told us 10 years ago that by 2019 the likes of AB InBev and Molson Coors would have lost huge market share to tiny, small batch, passionate craft breweries, we would have scoffed at them! At Good Fat, we want to help inspire a similar revolution in food.
 
What do you enjoy doing during your spare time?
Spare time? What’s that then? We all have young families so don’t get a lot of spare time, but what time we do we have we love enjoying the Sussex countryside and the sea (which is conveniently right on our doorstep).
 
What do you think of the Product Guru platform?
